Beef short ribs...
Rec Tec 590 stampede .(maiden voyage?) garlic, salt, pepper, and pepper flakes, started it 180⁰ for a few hours to get a good smoke blast, then I turned it up to 250⁰ till internal hit 175⁰, then turned it up to 285⁰ till internal hit 200⁰. Then i rested it 30 minutes (instead of the hour I planned on) because I was too hungry to wait☺.... got away with it.

Next time I'll do it a little hotter because I think i can get same results in less time and maybe save a few pellets.(red oak, white oak, hickory)
