Just finished my first cook, a 15 lb packer. I used a four probe smoke-x thermometer. I had one probe on the left side of the grate and one on the right side of the grate. Over the 18 hour cook I saw an average of 20-25 degrees difference between the two probes. The right side of the grill was the hotter side. I also realized that the Recteq PID is VERY slow to display grill temperature changes. In fact, it showed the dialed in temperature (I was at 225) 95% of the time and rarely ever showed it off by more than two degrees. The smoke-x showed temperature variations of 15-20 degrees on the grate throughout the cook. Not a big deal but it looks like Recteq has their PID programed to minimize displaying temperature changes. When you change the dialed in temperature, say from 225 to 250, the displayed temperature is very fast to display the changing temperature, almost instantaneous. The brisket is resting but sure looks great and smells wonderful.
