Actually handling meat on the grill. Like flipping or rotating meat placement. Or when I do steaks i smoke on top rack then remove the top rack so I have flipping room for the steaks on the grill grates.
I get a better cook if I leave out the grease tray and bottom rack, btw.

Obviously corned-beef is the topic everywhere. Other boards are saying 210 to 212 before it's actually probe tender because being cured the meat gets tighter.
That's it! Braised isn't a requirement, it's just a texture thing. We eat it straight off the grill as well.

A good ol' shot of 120 will usually make sure someone remembers not to do that again. Anything higher you need a friend and a 2x4 standing nearby to get you out of that mess.
