"Accessory" grill....hmmmmmmm.
I don't consider any of mine an 'accessory'. Each grill has it's strength and I use each accordingly. And I love each one for what it does best.

3-Camp Chef flat top griddle (though i don't use it as much as I thought I would)

The only time I use my smoke tube anymore is when cooking at higher temps, if I want that extra hint of smoke....and that is rare these days.
I had been using the 3-2-1 method, but yesterday I did just that: 225° uncovered until done.
Did 2 meaty St. Louis racks for 6.5 hrs. I basted them with a little smoked pork lard 1.5 hrs in, then left them alone.
Turned out great.

I bought grill grates for my Stampede and I've only used them once. But here's my .02¢....
You're going to be smoking and searing at different temperatures, so I'm not sure it really makes sense to leave your grill grates in, taking up real estate while you're smoking. Once...
