I just lay whatever wood I'm using on deflector . You need to have a chunk that does not hit the the drip tray so using a hatchet is needed sometimes. Over the years I have been using different wood chunks in my Kamados and I split some of the bigger chunks down so I am not over smoking my cooks...
I've been cooking over charcoal for years . I own three Kamados ,Green Egg, Acorn and Acorn Junior. So today before going to my buddies auto repair shop I decided to put on a couple of beef short ribs for dinner and instead of using my Stampede that I got in May I would light up my Acorn Junior...
In the winter sometimes its easier to put cover back on because it stays in the same shape that it was when it came off . Frozen in place. The covers for my three Kamados and my electric smoker actually standup on their own during the winter months from being frozen . No sun in my back yard. The...
I have a stampede ,outside covered in northern NJ with https://www.amazon.com/gp/product/B0792SLVZY/ref=ppx_yo_dt_b_search_asin_title?ie=UTF8&psc=1 . Love it . Lots of weather hits it in my backyard . To include Acorns galore.
I do have to agree . I Can't beat my large Egg to get a nice OO flour pizza crust crispy .
Hitched some rides with those Navy PBR's going up the Saigon river to the Cambodian boarder. They always had Igloo coolers with some nice water . That was uptown for us Grunts . My dog liked it too.
When I got drafted in 1968 we always heard "The Navy gets the gravy but the Army gets the beans" .
My MES 30 basically turned into my dedicated cold smoker when I went Kamado .
I feel guilty now that I'm using the RecTec. Real good BBQ has become way too easy.
You will absolutely not regret your decision to buy the Stampede, unless of course if you are feeding an army. Couple years ago went to have BBQ at a house with a RecTec Bull . We had brisket. Kicked A$$. I just got my Stampede about a month ago and since going RecTec my 3 Kamados and electric...
SmokeShow I could be wrong but I don't think you want to use your probes in pit temperatures over 400 . You might find same holds true for thermoworks like on the Smoke if you ever get one . With RecTec not needed , I have two for my Kamados and never use them on high heat cooks.
Uncle Bob I'm sorry if I robbed your idea .I had seen theses brackets mentioned somewhere else on the internet and ordered them .Didn't realize you had already posted your mod using them . I do apologize .

I try to use fresh Mozzarella as much as possible . It was always fresh from when I was a kid in the 50's living in the Bronx shopping at Arthur ave. Great cheese store there back then .
