    I just lay whatever wood I'm using on deflector . You need to have a chunk that does not hit the the drip tray so using a hatchet is needed sometimes.     I do have to agree . I Can't beat my large Egg to get a nice OO flour pizza crust crispy . Hitched some rides with those Navy PBR's going up the Saigon river to the Cambodian boarder. They always had Igloo coolers with some nice water . That was uptown for us Grunts . My dog liked it too.

    When I got drafted in 1968 we always heard "The Navy gets the gravy but the Army gets the beans" . My MES 30 basically turned into my dedicated cold smoker when I went Kamado . I feel guilty now that I'm using the RecTec. Real good BBQ has become way too easy.

    SmokeShow I could be wrong but I don't think you want to use your probes in pit temperatures over 400 . You might find same holds true for thermoworks like on the Smoke if you ever get one . With RecTec not needed , I have two for my Kamados and never use them on high heat cooks.

    I try to use fresh Mozzarella as much as possible . It was always fresh from when I was a kid in the 50's living in the Bronx shopping at Arthur ave. Great cheese store there back then .

    Yes . Let it dangle down . It was taped to the circuit board and I can see that not being a good thing interference wise. Solid signal now,knock wood. Was easy to do ,used knife and got under tape to peel it off .
