I just lay whatever wood I'm using on deflector . You need to have a chunk that does not hit the the drip tray so using a hatchet is needed sometimes. Over the years I have been using different wood chunks in my Kamados and I split some of the bigger chunks down so I am not over smoking my cooks...

SmokeShow I could be wrong but I don't think you want to use your probes in pit temperatures over 400 . You might find same holds true for thermoworks like on the Smoke if you ever get one . With RecTec not needed , I have two for my Kamados and never use them on high heat cooks.
