Hell, I would start early on the "Lo" setting to infuse smoke and ride that until bark is set. Once bark is set wrap in butcher paper with some of the rendered down trimmings made into tallow on the paper, now moving the RT-700 up to 225°F. Ride that until 203°F-207°F internal. Then rest for 4...
