I appreciate the feedback of yours running hot as well. I am ok with it running hot while grilling, however smoking at 225 I have a problem with it running so much hotter. Did you have a chance to run it at 225 to see how it compares?

You have to go into the controller menu. Press the temp display button and up arrow till you get into the offset menu. You can adjust the offset of the probe via the meat probe offset

I also have a Bullseye and I agree with most of your comments about the grill. It does get up to temp fast if you set it for a higher temp and then drop it down when it reaches the desired temp. For example set for 400, let it get to 225-230 and drop it down to 225. I have not had any issues...

I got a Bullseye about a month ago and I have been having some major issues getting the temps to hold anywhere close to the controller temp. For example I will set the controller to 225F and it says it is holding steady, +/- a couple degrees. However my meat has been cooking pretty fast...
