They are very handy for cold smoking and also adding smoke to faster cooks where the fire pot is burning hotter and not producing as much smoke, like if you are doing a tritip for example. I have two.

This will sear at a much higher temp 3200 degrees quicker which is better for a reverse sear, like restaurants do. You use MAP gas which burns clean and you won’t get ANY aftertaste from the gas.

Put the cast iron in a 500 degree oven for 20 minutes and sear on that. It’s like the fires 🔥 of hell. Or use a 3200 degree MAP gas torch to sear quicker and have less time for the heat to penetrate the meat and overcook the insides
