Used to love those things when I lived down there (not from Central Grocery, though). I made the mistake of ordering a whole one my first time. The lady behind the counter looked at me funny. I figured out why when they brought it my table. 🙂

Yes, I hear they do. They refunded me for the bad brisket they sold me a couple of months ago without any problems. But, I’m not sure I’d feel right showing with a grill I have used for 3 years and asking for a refund, though.

I don’t get those kind of swings even on startup. When do you close the lid?

I can’t think of why it would be a problem. But, if you aren’t sure you could always poke them through the paper. That is what I do when I wrap brisket in AL foil. But, I do it in hopes that thermometer can still communicate with block. Paper shouldn’t be a a problem in that respect.

I just noticed my yellow, uncovered, on a covered deck 590 today and was wishing I had put the cover on it a couple of weeks ago!
