I roasted some Hatch Chile`s yesterday and made some sauce for enchilada`s. I was surprised at how hot it was after de-seeding and washing the inside out. This was my first time using them so I really did not know what to expect. They did have a good flavor on the enchiladas, I just had to use the sauce sparingly. I have some left over to try with other things. I think I am going to make some smoked Queso and add some to it. I used "Dogcather`s recipe" and we really like it. Thanks for sharing with the group.
