Some people were interested in the bacon belly burnt ends I posted in the rec tec forum so I thought I'd share here. The recipe comes from the Bacon Bible by Peter Sherman. I cured the bacon subbing Peach nectar for mango nectar primarily due to availability. I brought the bacon to a 165 internal before resting in the fridge for 24 hours then split the chunk of belly I was using in two reserving half for bacon and half for burnt ends. Brought the burnt ends back to 195 cooled again and then reheated for 30 minutes in the rec tec before glazing and serving. They were excellent. pictures to follow.
