    Whole Beef Tenderloin - how far in advance can I prep the meat (trimming, etc)?

    Talking about 5-6#, nothing crazy. Is this something I can prep in the morning and smoke in the evening, or does the prep need to be done closer in time to the actual smoking? Thanks.

    Longer thermistor okay?

    RT-700 in a custom outdoor countertop. The controller ideally would end up in a housing on top of the counter. Last hurdle is a longer thermistor cable. Do y’all know of any reason I can’t lengthen it and/or how long I can go before there are issues? If I remember my science classes enough it...
