There are a few screws thats you remove to remove the hopper grate. No need to cut it. I have mine in there loose, (not screwed in), so it catches random stuff that might be in the pellet bag (check Facebook) and so I can keep a large desiccant bag in there to collect moisture.

I can’t compare the pros and cons of the 700, just the 340 to 590. What I can tell you is that as you go larger it’ll take more time to heat up, in practice it won’t be that long, maybe an extra few minutes here or there at lower temps, but higher temps are another issue. The 590 is massive...
So that's a great question. Right now it's 73 and overcast in SC and I've tried it at 0.5-1.5, which all seem to be able to hold 180 perfectly. I imagine that I'll be able to do about 1.0 on a really hot day and still be able to maintain it, but my grill is also covered.
