    I got a chance to check it and the Rectec was reading 225, and a separate probe was reading 222-224. I guess the brisket just cooked fast. Thanks for the advice, I should have checked before I ever did that cook. Not all mistakes end badly I guess!

    Thanks for the help everyone. The brisket cooked FAST!!! I set it at 225 (it weighed 9lbs trimmed. I didn’t peek at it, it hit 162 and stalled for 30 minutes and reached probe tender at the 7 hour mark (203) so I pulled it off and let it rest for 3 hours. It was moist and passed the pull...
