Pulled Pork - To Wrap or Not?

I don't wrap butts or much of anything else. No spritzing or mopping either.

    Your favorite brisket technique?

IMO and experience most people over think and agonize over brisket terribly. Trim it. Season it. Cook it fat cap to the heat till probe tender. I find it to be almost that simple. Buy choice or prime if you can but even lesser grades can be cooked successfully. Use simple seasonings. S &...

    Pellets and Storage

I try not to have too many open bags at a time. Every now and then I'll try something new however. When I store outside the original bag I use 6-gallon buckets from Academy Sports with their swivel lids and put enough of the bag in the bucket to know what's in it. They're a bit pricey but I...

    Favorite bbq sauce?

I like a number of sauces. For pork sammies I think nothing is better than homemade Shack Sauce. It's the BBQ taste of my youth. For glazing pork ribs I like original thickness Bone Suckin' Sauce. For doctoring baked beans I like SBR's or Kansas City style sauces. Then there's Blues Hog...

    Recommended Pellet Grill Accessories

If you're worried about cooking on aluminum then by all means you better quit cooking with wood and charcoal. All sorts of nasty carcinogens involved that you don't want to be involved with. Also don't cook anything less than well done. Ya need to be sure the nasties are all cooked dead.

Bullseye Modifying GrillGrates for the Bullseye

Regular aluminum does Not require carbide cutting tools. It cuts very easily. Anodized aluminum might need carbide but I don't think so. I'd try the bandsaw to cut them. At worst I think you would lose a blade. Try a very small cut on a corner first to find out.

Have you ever tried these pellets

Bear Mtn. does not sell 100% Hickory or any other single flavor wood pellets. They sell 100% hardwood blend pellets. LumberJack does sell 100% Hickory and other flavor woods but they also sell blends so look carefully before you buy.

    RT-1250 Best Pellets?

^^^^^ That's been reported before and denied before. Who knows for sure? Certainly not the local store managers. Probably only RK purchasing and whoever makes them knows for sure. LJ has reportedly denied making them. Perhaps the Bear Mtn. branch of Lignetics? Perhaps some other company?

    RT-1250 Best Pellets?

Unless it says it is 100% the flavor wood you want, it is a blend. 100% hardwood means exactly what it says. Everything in the pellet is a hardwood that is suitable for using to cook with. Most of these blends use Alder or Oak as the base wood depending on where the pellets are made and what...

    RT-1250 Best Pellets?

Bear Mountain does not make 100% Hickory. They make 100% Hardwood pellets. https://bearmountainbbq.com/collections/frontpage

    RT-1250 Best Pellets?

I was going to suggest Cookin Pellets as they usually get good reviews and they have a number of dealers in CA. Bear Mtn. at TSC was a good suggestion. Have you tried any Kingsford Pellets? They should have good distribution in CA. My favorite so far is LumberJack Hickory. Don't know about...

    Anyone Use Lawry's Seasoned Salt?

I've used Lawry's for a long time. I also use Cavender's Greek Seasoning, and recently have started using La Preferida Sazon. All are good.

    Bull 3-2-1 ribs

Never go by time or temp to determine doneness. Time and temp are indicators to Check for doneness. Yes, I mean you should put a known accurate thermometer in your cooker to compare against the cooker's thermometer.

    Bull 3-2-1 ribs

It looks like you cooked St. Louis style ribs. If that is so they should have been fall apart tender when done 3-2-1. 3-2-1 is intended for full size spare ribs. I'd double check your cooking temp with a known accurate thermometer.

Pork Frenched Rib Rack cooking suggestions

I did a crown rib roast a few years ago. Being almost sliced apart they cooked nice and evenly.
