What's your favorite way to do chicken breast?

Just finished my first cook with the RT700 and produced probably my best chicken to date.

I did about 20 mins of extreme smoke then cranked it to 450 till 160° internal.

The only thing I can say wasn't spot on was me missing the little bit of char I got from my kettle.

Would the sear grate give me a little more of a crust? How do you do your breast?
 
I still haven't tried chicken breasts on my smoker.
My trusty kettle is still my go-to for shorter cooks. Two-zone fire, wood chips for a nice hit of smoke, then over the flames the go.
I don't doubt the sear grates would give you a nice char.

My favorite way to do chicken breasts is to do thighs instead. ;-)

Seriously though, I ate a TON of breasts over the decades. It was until relatively recently I discovered how good thighs are.

Beasts or more difficult on a pellet smoker because the line between fully cooked through & dry is a thin one. Go by temp versus time & make sure to probe them individually & in several places.
 
Guess I will have to give chicken thighs a try. I have usually done breast with mixed results.
