Bull What are you cooking for Easter??

The whole family is coming over this Sunday. I'm cooking. Thinking about a double-smoked spiral-cut ham with a special glaze (a la Malcolm Reed - see below). Maybe a brisket! What are your plans?

Just had my RT 590 for a few weeks, retiring tomorrow (y)First smoke was chicken thighs and smoked mac n cheese, second was beer can chicken and Easter is going to be my first pork butt. Thinking about smoking at 225 all day Saturday, shred and crock pot to transport on Sunday and keep moist.
 
This inspired me. I'm picking up a spiral-cut ham esta noche!

My wife makes some incredible scalloped potatoes so I may see if she doesn't mind crafting those as an amazing pairing for this double-smoked ham I'm about to drop.

Should be a pretty remarkable weekend of food!
 
Double smoked ham and au gratin potatoes. Both will be cooked on the Bull.

I have done a spiral cut and non spiral cut in the past. The spiral cut dried out on me. So I will go with what I have had success with.

I cannot get a spiral ham done right either. It'll be something else for me...
