I am looking for an accessory for my grill. Doesn't have to be RecTeq branded I have the grill grates, non stick mat and a cover already. I want to get something that will be multi purposed since I have a weber kettle, gas grill, and my fire pit.
 
Other than a couple of Thermoworks products and some cast iron for searing I don't have a need for any accessories.
 
One thing I find to be really handy is a grill pan for smoking or grilling smaller things that may fall through the grates. It also makes transport from the kitchen to cooker easier too. Here’s a couple examples:

I guess the only accessory I have a piece of 1/4" window screen to grill bacon.
 
pretty simple. I just lay the bacon on it and when done don gloves and lift the screen out to ease removing the bacon.
 
I ordered the grill mats and sear plates from Recteq. They aren't here yet so I can't comment on them
 
Top rack helps when you want to catch drippings. I always put a pan under my butts so I can mix back in once I pull it and the rack makes it easy

I got one grill Matt with my 700, I will defiantly be using this Matt a lot.
Got a set of 5 grill mats on Amazon for less than the price of 1 from recteq, guess there's a lot of markup.
Anyway, great accessory, been using them for bacon, veggies, pizza, shrimp, scalops, meatloaf, etc... cleanup is very easy.
Nice having 5 so people can make their own pizza on fresh dough and have them ready for the grill to cook 2 at a time for a pizza party.

Those are my go tos
I need to buy a good temp pen I have a cheap one that does the job but a little slow at displaying temp. My whiskey stash never dries up I always have a bottle on hand. As for knives that's on my list of getting just want to find a more budget set but not really a low budget. I want to try and stay under 500 for a full set.
 
Never buy a set of knives. Buy one decent knife for each specific purpose that you actually use them for. Make a habit to hone and you'll only need to sharpen if you lose the edge. For $500 you can get some decent knives and some stones/hone to keep them in sharp shape.

I also agree with a Thermapen.

Are you using the RT version of the top rack? I didn't order that thinking that there were cheaper options out there or other sizes. I like that idea of tossing a pan under the butt to catch the drippings. I did buy their mats and now see there are cheaper options there oh well.
 
I did get RT's, but *I'm sure there are plenty of options to find one cheaper. All it needs is enough space to get a pan under.
 
Having a digital thermometer for me is a must. I also have the Traeger cast iron reversible griddle and stainless grill basket, which I use a lot. Also, I'm not sure if this counts as an accessory, but I also purchased a high quality cover for my grill to protect it.
