Turkey pics

We’ve been waiting for an oven ordered back in August. So we decided on smoking it. Don’t care for smoked taste in turkey. also was the first time buying a live turkey . Never again ,it was $67.00 $5.00 a pound. Wife usually gets them for free.

I forgot to take a picture but it was the best bird I have ever made.

Basic wet brine overnight, rinse off turkey and then dry skin completely.
Used a salt and pepper rub and put it in the RT-700 for about 4 hours on 225 to get the smoke in it. (Rec Teq comp pellets) After that I put the probes in and cranked it to 325 and let it go until 165. I think it was about an hour and a half at that temp. Around a 13lb bird.
Let it rest an hour and a half and then cut it up (still steaming). Melted a couple of sticks of butter and dropped in some herbs, drizzled it over the meat and served it. Family, guests, and myself thought it was the best turkey I had ever done.
 
I love Chef's Toys. We have one nearby. They are also great for knife sharpening. I'm decent at sharpening, but they are better.

This year, I got fully outfitted with a 10 x 4" diamond lap setup, fine and extra fine, plus a magnetic leather strop to put on top of the steel diamond laps. I'm amazed at what a leather strop and some diamond paste on it can do. The super large 10 x 4" surface makes sharpening even my 12" brisket knife a breeze.
