Hey y’all. I’m planning on smoking a spatchcock turkey on the flagship 1100s high rack. I want to catch droppings for a gravy and plan to wet brine so unsure if there is another way ? Think I’m good on the high rack? Is there another way to put a pan under the bottom grate??
 
I just use an edged baking sheet pan with a wire rack. I usually throw some onions, celery, garlic, lemon slices, and fresh rosemary under the bird on top of the rack. I thought about using one of my traditional stainless steel roasting pans, but I really didn't feel like scrubbing smoke stains off of it. The baking pan cleans up real easy with some Dawn Powerwash and a run through the dishwasher. I have plenty of drippings to make a lot of gravy.
