TriTip done like Brisket

This was my 3rd cook of a TriTip like a brisket. 2.7 lb choice TT. Mustard prep and Montreal Steak Seasoning. Fired up the 1070 at 225* and smoked for 3 hrs. Temp was at 155* and stalling. I also smoked a couple of tablespoons of lard in a pan at the same time. Removed and foiled with 2 tablespoons of lard basted on and 2 oz of Campbells Beef Broth, two layer of foil and then 3 more hrs in my kitchen oven at 225*, until temp reached 207-208* and butter soft. This time the results were spectacular, with tender brisket like meat and similar taste. The lard kept it from getting too dry and added a bit of smoked flavor IMO. since there are just two of us there is enough for 3 meals and no waste. Great for sammies as well. Trisket a winner!
