Other Tried a new one: Pumpkin seeds

Every year I roast my jack-o-lantern seeds for snack in the oven. They are good. Last night I tried it on my 590 and I will never make them another way. Smoky goodness especially cracking into them while still warm!

I had 2 pumpkins worth and they had been soaking in saltwater for a week (only because I never got around to cooking them; I'm sure overnight would suffice). Pulled off all the pumpkin innards and rubbed in olive oil then spread them out on grill mats.

Smoked on the lowest setting for 20-25 min.
Add seasoning (I used seasoned salt)
Turn smoker to 325 for another 20-25 min.

I also do this yearly but I don’t soak my pumpkin seeds just sunflower seeds are soaked. I rinse mine in salt solution and lightly oil them. I season them then smoke 30min and crank it to 400 for 15 - 20 min to get them crunchy I usually will toss the with a smoked sea salt at the end
 
I will definitely try soaking mine next time to see if there is a difference. Thanks for the recipe 👍
