Tri-tip for Block Party

We're having a block party tomorrow. So, I smoked a couple choice Tri-tips from Costco on the 700 today, to 12xf, then reverse seared on charcoal. I'll chill them and slice, then tray in an au jus overnight.

Did that just a few days ago. We love tri-tip sandwiches made with some locally-baked ciabatta rolls. Yours looks really good; enjoy!

Are tri-tips a western us item? I have not been able to find them here in Savannah Ga

They are definitely a big west coast item. Some folks on the forum say not easy to find as you head east. Wild fork would be a shipping option, if no local supply.
