After not posting in a while, I decided to put up a post of my ribs today. I've been using the RT 700 regularly, just haven't posted.

I had smoked something Monday and didn't cover it since. Now it's covered in ash, probably from as far away as Oregon, I'm told.

These big ol ribs are proving to take longer than expected. Probably my fault. I ran them at 180F for the first hour, then bumped to 225F for 4 more hours, then bumped to 275F in my impatience. They've been at 275F for 1 1/2 hrs now and they aren't quite there. Maybe 20 mins more and I'll check them, then sauce em.
 
Look great! My stomach made some noises when i saw that picture. Ha! I hope they were delicious.
