Man did this spatchcock chicken taste great last night. This is the only way I like to cook my chicken on my RecTec 680. I used the RecTec Greek rub. It’s my families favorite chicken rub. The chicken turns out so juicy with a great crispy skin. I use the Smoke Daddy Heavy D for added smoke flavor. Last night I used Sam’s Club Premium Smokehouse Blend ($14.98 for 40 lbs) and I put pecan wood in my heavy D. I used the following cooking guidelines. Always turns out great.

Spatchcock Chicken
  1. 375 degree.
  2. Dry skin thoroughly then add rub. Don’t moisten skin for crispy skin
  3. Check for thigh temp 170 after 45 minutes
  4. Thigh 170F-175F
  5. Breast 160F
