First, let me say I posted this in the wrong thread. Did not mean to highjack. Will move this afternoon.

Trimmed the night before, seasoned heavy with Cassanova's Competition Rub. Rest wrapped in fridge overnight. Put on smoker at lowest temp for an hour or so. Bumped up to 225 until IT was 135. Seared both sides for a couple of minutes, Voila! I did spritz with apple juice now and then.
