Slicing Knife?

Got the Cutluxe 12" slicing/carving knife off Amazon for just under $50. I'm happy with it.
 
How do you know what angle the knife has to be sharpened at?

The angle should be listed somewhere in the literature. In my research, I found everything from 11 to 18 degrees. For example the Mercer Millennia Granton Edge slicers state a 15 degree double edge.

It looks as if some of the Japanese blades, and I am guessing others, are only angled on one side so are predominantly right handed knives. Seems strange but important for lefties.

Holding that angle while sharpening is another issue.
