I smoke and braise beef short ribs all the time, but I think this is the first time i have cooked beef plate short ribs. Went on the RT-340 this morning at 10:00, Kingsford maple pellets in the hopper, LJ pecan pellets in the smoke tube at 225*l cooked them to 205* about 16:00, let them rest wrapped in foil and a towel in a cooler for an hour. Absolutely perfect. My wife doesn’t normally care for short ribs, but she absolutely loved these.

i want to try a cheese cake in the bull. today we had a chunk of black bear meat, seasoned with spg and weber original rub. cooked it with lumberjack competition blend. turned out pretty good, with a great bark

cooked prime new york strips tonight for a early father’s day. my dad actually came over and i grilled for him. im sorry i didn’t take a finished picture but i was trying to really impress the old man and forgot. he isn’t the type to complement unless you really earned it. and this steak got multiple compliments. super thick strips. took 1hr 20min at 200 to hit an internal of 110 then seared at 500 until 135. seasoned with salt and pepper and used lumberjack pellets. it was the 2nd best steak i have eaten. i keep a list of the top 5 lol.

well today was a busy day for the grill. started the day off smoking deer snack sticks. then grilled bacon for pizzas for our guest tonight. we set a personal record for cooking 6 16in large pizzas. all with home made tossed dough! set grill to 500 and ran two at a time for about 12min per pair. it was a big success, our guest really enjoyed it!
