I finally did it!

I smoked a turkey, well a turkey breast, and I've got to say this is by far the best way to cook a turkey.

Never been a big fan of turkeys cooked in the oven as they tend to be very dry. Prior to cooking on the Rec Tec, I always deep fried my turkey and didn't think it could get much better... Rec Tec wins hands down.

Process:

There wasn't a dry spot in the entire turkey. Very moist and delicious. To top it off the wife made stuffing, mashed potatoes, deviled eggs, and mac 'n cheese - even a pumpkin pie.

A mini Thanksgiving dinner.

I'm going to do this again and probably soon. Man, it was great!
 
So we're having a nice, chilly, temps in the low 40s, Sunday afternoon and I fire up the RT to make some "Blasphemy Ribs". You might have seen these if you cruise through the Amazing Ribs site. The blasphemy of course is cutting the rack down to individual units BEFORE cooking. It was suggested that it works best with baby back ribs, so that's what I did. Basically 2.5 hrs total cook at 225-230 with the glaze on for the last half hour (so with painting time you're closer to 2 3/4 ish). Did the usual pork rub I use for about 6 hours prior, and then for this batch I did an Asian style glaze that consists mainly of Tamari and Orange marmalade with a few more spices. Finish for plating with a sprinkle of toasted sesame seeds. Since we were on an Asian track the bride did a sesame/ginger salad dressing and I whipped up a batch of fried rice. With this method the ribs cook in a reasonable amount of time with little fuss other than the glaze painting. The outcome is a sweet/tangy/slight heat with tender meat that still needs to be pulled off the bone by your teeth (our preference over "fall off the bone"). Man, it was yummy. My bride gives her highest compliment when she proclaims a dish "company worthy"......well, that and getting up for seconds.;)

Last nights fare …. Prime Rib Eyes! Smoked on the pit, cheated and seared in a CI skillet with a little EVOO and butter.

Have an 8# butt on today, should be hitting 203 in a few minutes and coming off the pit. Good weekend for my RT
