Beef Rolled Cross Rib Roast

I had a prime cross rib roast that I had in my freezer and it needed to be cooked.
Came up with this while my sister in law was visiting. It turned out so tender and flavorful. SIL was amazed that it was a chuck roast.

Injected with a mix of:
Lard
Broth
Garlic powder
Sea salt, I used my smoked salt
Mix and warm to melt lard. Inject then rubbed with Chimichuri with basalmic vinegar.
Set in refrigerator for a few hours.

225 deg, cooked until 120, pulled, wrapped in butcher paper and let sit 30 minutes.

Really good. So tender and moist.
