I am cooking both a standing prime rib roast and lobster tails on my recteq 590 pellet grill for Christmas dinner. My question is; How long can I rest the prime rib roast in a cooler without wrecking it while I smoke the lobster tails, which should take approximately 45 minutes to an hour?

I am a mere mortal on this compared to many others on this forum, but based on your pull off temp for the RR, and how you rest it you should be fine. I let mine rest a sold 20 minutes min. tented if that says anything. Good luck and Merry Christmas!
 
If you wrap it in foil, then a big towel and put it in an insulated container (cooler, hot bag, etc.) you can rest it up to at least 4 hours without a problem. In fact, I recommend resting it this way for at least an hour. That should work out about right for grilling the lobsters. Good luck and let us know how it all turns out.

If you have a Cambria, pizza oven, or similar way of controlling the temperature, you can definitely extend the rest/sit time of your rib roast. Be cautious that you don’t cook it completely to the desired temperature if you are going to reheat it as the reheat could actually be called re-cook if not done properly and I personally don’t like medium or well done meat. You can also consider adding additional moisture to the bottom of the protein in hopes that it will slow the expulsion of natural juices. Either way, you will be successful if you are careful not to introduce excessive heat to the finished roast. Also, you may want to keep looking at this thread as there is an entire subset of chefs that are Sous Vide specialists and I am sure they can share their methods for optimizing your experience.
