I`m a former many decade stick burner. This is my very first time using a pellet pooper.
I did the burn-in yesterday, and thru the ribs in it today. Overall, i was more impressed than i thought i would be.
I`m not sure why people say you can`t get much of a smoke ring with a pellet pooper. Mine seemed to have a decent ring.

Pitboss Hickory Pellets
5hr cook time.
No binder, just a light dusting of dry rub.
Started with the "LO" setting for the first hour
Then started bumping up the poop temps little by little until i was at 250. The last hour was at 275
My intent was to get a nice red bark Memphis style rack of ribs. I think i got there pretty close.
The wife was my final judge. She said we`ll definitely be making these again! (happy wife, happy life
) They were very tender, and tasted better than i expected. Its a different texture and taste compared to a stick burner. Can i live with it? We`ll see, lol.
This smoker stays right where you set it.
It varied +/- 2 degrees all 5hrs during the cook.
Barley used a pound per hour of pellets.
