Beef Rapid Defrost Best Practices?

Wow - you guys are getting way to Alton Brown on this.
Meat's in the garage fridge ready to go. I'll trim and smoke like normal tomorrow night. I might even wash my hands before and after trimming....we'll see.

And before I get myself in trouble, I will leave it at that. Unless I am coaxed into a healthy debate. ;)
About 3:45 mins fat cap up on a 20 pounder of letting my old lab "trim" would get to about a 1/4" fat cap and thin edges "trimmed" to that aerodynamic shape that would make Aaron Franklin proud.
