About 3:45 mins fat cap up on a 20 pounder of letting my old lab "trim" would get to about a 1/4" fat cap and thin edges "trimmed" to that aerodynamic shape that would make Aaron Franklin proud.Wow - you guys are getting way to Alton Brown on this.
