This is my go-to rub when I'm doing pork butt:
  • 3/4 cup sugar
  • 1/4 cup salt
  • 1/4 cup paprika
  • 1/3 cup black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon chili powder
  • 1 tablespoon garlic salt
  • 1 tablespoon celery salt
  • 1 tablespoon hickory salt (see smoked salt thread)
  • 1 teaspoon cumin
  • 1 teaspoon jalapeno powder
  • 1 tsp cayenne (if I'm making this mostly for me, I go heavy on the cayenne)
There's a lot going on here, if you don't have everything just go with what sounds good. I have a habanero chili powder that I'll use sometimes if I really want to kick it up. Throw a tablespoon of white pepper in there too if you like it with some kick. I like my rib rub a little more basic, but if I'm in a hurry this works well for that too.
 
looks pretty good blue, but that looks like a lot of salt. does that dry out the meat?
 
I don't think it does.... that is one tweak I haven't tried though since I started adding the hickory / garlic / celery salt. I might back down the regular and see how it turns out.
Remember though, this'll easily do 2-3 butts depending on size, so it's really only 2-3 tablespoons of salt on each.
