Hello. I’m used to cooking on a broiler or a six 700° oven. My bull’s-eye tells me it’s at 500 600 or 700. How is that possible that I throw a fillet in there for 3 then 5 then 10 minutes and there’s still no charge to it whatsoever?

I thought this thing was supposed to charge like a grill?
 
Assume you mean "char"? Most here use aftermarket racks/plates to get a good seer in their pellet grills, they obviously get hotter than the factory racks.
