Need dairy free queso recipe

My wife can't have dairy or onions for dietary reasons but I can't find any good recipes for queso that fits her needs. I can find dairy free cheese and leave the onions out but I feel like the queso would lack flavor. Cheese and peppers just doesn't sound like queso to me.

Following. Wife with same. Have avoided queso so far because dairy free cheese sucks.

I did find some rubs though that are allergy friendly.
