Looks good, but where the heck did you ever find a ā€œbone-in brisket?ā€ They are about as rare as henā€™s teeth these days. :unsure:
My son raised an butchered a beef. He is very generous. Also gave me a 2.5 inch ribeyesteak I did on a weber kettle. I might be biased but I think it was the finest meat Iā€™ve ever eaten. Smoked it with pecan chips to 120 and then seared it over coals for about 6 minutes.

Nice! You have obviously raised a good son

I love it when folks do things ā€œold school.ā€ Many years ago, briskets came bone-in and were smoked that way. Then, we got all high-falootinā€™ and trimmed them down to boneless.

You did a great job with your brisket. It looks nice and moist. What time should we stop by for sammiches? ;)
