Greg, I will do beef, elk, bear, venison, it depends on what I feel like at the time. I enjoy it and people eat it up.

I once stared down a bison in a South Dakota state park while I’m on a Harley, being blocked by the bison. Bison won, so I’d expect a brisket to be massive!
