Stampede Increase smoke

I have a 700 and I gotta say that I get plenty of smoke. Low and slow is the ticket. I dis a brisket the weekend before last. Launched it at 220 for 12 hrs. Then wrapped to finish at 250 Plenty of smoke. Just my opinion.

? ? ? Do you just lay them on diffuser plate?
I split seasoned oak and mesquite about finger thickness. Then Layer pellets and broken up Kingsford charcoal. Light em. And put them under the grease pan. In front of the defuser.

I did get a little grease fire today. Prob will keep them on top of the grate for now on. Lol. Great flavor though!

Lower the temp for the first couple hours of cook and try using wood chips on diffuser. Pellet tube work also if you need more. Also make sure you use quality pellets... not all pellets give good smoke. I like lumberjack.
 
I’m sure I would enjoy the flavor of pellets more if I didn’t smoke. But the addition of seasoned wood really helps.
 
"LO" 180 deg F Setpoint. For cold smoking or if I want more smoke in addition to the grill, I use a Smokai Smoke Generator, similar to Smoke Daddy Smoke Generators. It can be used with chips or pellets.
