I put it to y'all .... What Ice Cream goes best with Smoked Salmon (or any Fish) ?

As the Title says; "What Ice Cream goes best with Smoked Salmon or and Fish ?"

Here are the Flavors I currently make:
Café au Lait: A Coffee Custard / Ice Cream
Chocolate
Clove: Yes, Clove Ice Cream .... it's GREAT
Crème Brulee
Dulce de Leche
Egg Nog
Fruit: What ever is fresh at the time .... i.e. Momma Black Berries are coming-on, but they're not going to be ready for this weekend
Ginger Spice: This is another odd one, but really good too
Holiday Spice: A Cinnamon and All Spice Custard
Honey Vanilla
Jamoca: Like an Arby's Shake .... Mocha, Coffee / Chocolate
Maple
Mint Chip
Pumpkin Spice Custard
Root Beer Float

I'm thinking Clove or Mint Chip, but any other suggestions, I can always give it a try

My vote for the best flavor on your list to accompany smoked salmon or other fish is YES! I didn’t find even one that I would not take a nice dish of with smoked salmon or other fish.

Since it's going to be 105 here Sunday, I think something that adds to the "COOL" of the Ice Cream is called for
That's way I was thinking Clove
It has that and so does Mint Chip
What's the name of a good Seafood Restaurant that specializes in Salmon ?
Maybe I'll Google them and see what Ice Cream they have on their Menu

Momma can't have Processed Sugar, so I make all our Ice Cream with either Honey or 100% natural Maple Syrup

Maybe this is for dessert, and if that's the case then I'm with @Jim6820 they all sound pretty good. Though I do love me some root beer floats.

Here's our Recipe for that Ice Cream:

Root Beer Float	Whipping Cream	Half and Half	Maple Syrup	Salt	Vanilla Extract	Root Beer Concentrate
	1/2 gal	1 pint	3 cup	1/2 teasp	1 table spoon	1 - 2 oz bottle

You can substitute Sugar (1 to 1) or your Sugar Substitute of choice (you do the math !), for our Sweetener
