There are many factors that go into an accurate answer. You identified the ambient temperature and cooking temperature which is great. At that temperature, with the full 40lb capacity of the Bull, you are potentially looking at ~25 hours of fuel/ cooking time. This of course will be influenced by the pellets, times and duration that you open to check the items being cooked, and starting temperatures of the protein/product. If you can let us know what you would be cooking at that temperature overnight, it would be helpful. I am currently doing a 19lb brisket at 235F and don’t expect to replenish pellets for the entirety of my 18 hour cook.
An “overnight cook at 325F?” For two pork butts? I usually think of an “overnight cook” as being at least 10 hours. Maybe it’s just me, but 10 hours at 325F seems like serious overcook for a couple of pork butts.
