Good morning all! So my wife had a heart attack a year and a half ago and has to watch the intake of red meat. For all of you smokers out there can you send me smoking recipes that you have used and approve on for healthy, chicken, fish or vegetable dishes as an alternative for red meat? Any help is appreciated.

I don’t have any specific recipes, (well, actually there is one shown below) but don’t forget turkey. Ground turkey makes a great meatloaf and you can smoke/grill turkey breasts, thighs and legs. All can be delicious.

We frequently grill salmon (not “farm-raised”) with just a little salt, pepper, granulated onion and a drizzle of lemon juice. Halibut and Ahi tuna are also good smoked/grilled. With Halibut, it needs to be marinated for a couple hours to avoid dryness. I use white wine, a little soy sauce and splash of lemon juice as a marinade.

My wifes a vegan(😱) so I smoke damn near any kind of veggie all the time for her. I use every rub in my repertoire as well and get no complaints. Depending on the veggie, sometimes a blanch helps with cook time. The veggies taste great but you will use copious amounts of EVOO. Even smoke tofu and seitan as well, can get meaty textures as well. Obviously not my cup of tea but she digs it.
 
I would look at things like you noted and other proteins as @Jim6820 noted. For seasonings I am sure low to no sodium but you can use other spices that are heart healthy and compensate for the missing salt. I did it for years. I have some good spices/runs for poultry (turkey or chicken). I just need to dig into my archives.
I can vouch for @Jim6820 recipe for the pork tenderloin. Bothe marinade and the timing and I used the RT-700.
