I love Hatch Chili’s and I know how to roast them on a grill. My question is, has any of you tried roasting them on a pellet smoker, and if so, how did you do it? Our grocer had a bunch of fresh Chili’s come in at a price I couldn’t pass up. Unfortunately it’s going to be 116 today and I am not planning on smoking or eating anything hot today. I would like to get them “roasted” and then freeze them until nicer temperatures arrive.
