Grilling Notes - Mid Week, Reverse Petite Filets (Trailblazer & Bullseye) - 12 May 2021

Haven't done a "duel smoker" cook in a while, thought we try a Reverse Sear effort with some Petite Filets this evening. Using the Trailblazer to smoke the steaks for ~30 min (target of 100F), followed by a short hot one on the Bullseye to finish off the cook. Kind of a slow day today, as I'm prepping to engage our grandson (New Jersey) with a little Multiplayer XBox. This cook will take my mind of the "Butt Whooping" he's about to put on his grandpa......<grin>

  • Grill Locations: Hot Springs Village, AR.; 34 37 60.0N 92 54 55.4W - first "non stormy" day of the week
  • Weather at time of Grill: Almost middle of May, Partly cloudy, north wind, still having cooler than normal weather for this part of the country, Temp ~67F, Humidity ~56%
  • Total Event Time: ~1 hr. 18 (Min Includes steak rubs, veggies, & very minor grill preps & plating)
  • Grill Plates: Trailblazer - No (just smoking on the OEM grates) Bullseye - Yes (Using one of the Trailblazer Grill Plates fit nicely on the Bullseye, perfect for Petite Filets)
  • Pellets Used: Rec Tec Ultimate Blend

  • Meat & Meat Prep
    • Meat: 2 x ~4.5 oz. Petite Filets (USDA Choice) from Walmart
    • Total Meat Prep Time: ~4 min, Mix of Rec Tec Heffer Dust & Expresso Spice
    • Meat on:
      • Trailblazer at 16:59 CDT, probes say starting temp for Strips is ~52F, smoke the strips for ~30 min with a target temp of ~100F - actual time to target was ~34 min
      • Bullseye 17:38 CDT, no probes, using temp stick, roughly 3 min per side on the flat side of the grill grates. Targeted 145'ish F, but took the wife's off ~ 1 min early.

  • Sides:
    • Roasted Asparagus, Mini Tomatoes, & Onions
    • Large Baked Potato (halved between us)

Misc Grill Observations - all times are CDT
  • Total Grill Time: 41 Min (Trailblazer) 33 Min (Bullseye)
    • Grill Start to Trailblazer Target Temp LOW F: ~74F to 180F (~16:50 - 1657 CDT) ~7 min.
    • Grill Start to Bullseye Target Temp 450F: ~72 to 450F ~ (17:25 - 17-43 CDT) ~18 min.

General Comments:
  • Griller’s support tool of choice: Black Box "Premium" Pinot Noir - not as good as bottled, but good enough for us!
  • Overall happy with this cook - for a "cheap filet", the meat had good "smokiness" from the trailblazer, and was a good hot grill on the Bullseye - I smother mine with A1 anyway, so not sure how important the "doneness" is...<grin>

Another great cook @Sscottfitz. Did you do the potato and asparagus in the oven or the Trailblazer? Those veggies look delicious.

Out of "laziness", usually it's the oven, we've used the trailblazer for veggies before, but on a day to day basis, it's usually the Recteqs for the protein, and the oven for the rest.....
