All-

New here, not new to forums. I get my bullseye 380 tomorrow, doing some homework reading up. Plan to grill and smoke alot! Moving away from my offset charcoal smoker, as the temp swings make it a full time babysit ordeal. Hoping to be able to walk away from the 380 on a longer, low smoke.

Welcome! I thought I read 380 and low and slow smoke? I so get the fire tending but I went with a 700 since I have both gas and Weber for hot and fast. Enjoy and smoke on!

Welcome to the forum, @MTMarine; glad you have joined us.

You might want to keep your offset charcoal smoker for the “longer, low smoke(s).” Not sure whether you are getting the RT-380 or the RT-380X, but IMO either one is better-suited for hot-and-fast grilling. Grease management (and, fire management) on low-and-slow cooks has been problematic for some folks. YMMV
 
Thanks Gents! Not crazy excited to hear about the low and slow problems, this info didn't come up in my research....

I have a regular 4 burner gas grill, my charcoal offset smoker, and wanted to hybrid the both, if possible. What led me to buy the 380-standard, not the X, was the ability to control temps, and time, and didn't feel the need for wifi controls. Hope I didn't make a mistake, but def wanted longer low smoke, unattended cooks.

There are certainly better grills for low and slow but the 380 can do them. Check out some brisket or pork butt on the Bullseye videos on YouTube and they’ll show you how to set up for grease management.

As @Waterboy said it can be done. My SIL just did a MS mud smoke on his last weekend, and he has done chuck roast like brisket, shoulders, ribs and more. His reasoning for the OG 380 was to replace his hot/fast grill and it has been stellar. He does have to do grease mgmt for low and slow.

Here is a butt he did.
