Really frustrated with my purchase.Got my 590 about 10 days ago. Put on a 7 pound brisket at 225° and set my timer to pull it and wrap it at 165°. Took almost 8 hours for the meat probe to show 165°. After I wrapped it, the meat probe jumped 30° to show 195°. I put the other meat probe in and it was showing 153°. I’m not sure what is going on. Has anyone experienced these types of fluctuations with the meat probes? I wound up throwing the brisket away out of
frustration.
I tried the calibration with 3 parts ice/water. Couldn’t get the dial to turn past 15° to set it to 32°.
 
So your trusted instant read thermometer indicated? I take it you were using the RT onboard probes?
 
My experience, and most others on the forum, is that the reqtea probes are mediocre at best. Thermowerks and Meater are top of most lists. I have a thermowerks signals. Personally I don't use leave in probes for brisket, but they have their place. I wouldn't trash the smoker because of a probe.
 
Are the nuts that secure the probe connection jacks tight? That’s been an issue for some folks.

That said, I agree with @RPopeilFan that the Recteq probes are “mediocre at best.” That’s why many of us use a quality third-party temperature measuring device—wired or wireless—to monitor our cooks.
 
I’m a new 590 owner with only a few cooks done, but I treat the recteq probes just like any probes that stay in during the cook, even my Meater. They provide me a general idea of the internal temp, when I really want to know what’s up I use my thermapen to check various spots. I would never rely on a probe just stuck in one spot.

But back to your original post, my recteq probes after calibration have so far been pretty accurate.
 
So you perhaps threw away a perfectly good brisket? I use multiple external temp probes and also the good ole poke/probe the meat for tenderness, and don't ever put too much trust in any temp probe, and the meat will show different temps depending on where you have the probe.

Wow, would have been cheaper to throw the grill away
 
If you want a cheap alternative to buying aftermarket ones, look up elgin bbq probes on amazon. They work well and work with RecTeq controller. No need to adjust them, they work right out of the box and that will solve this issue. I think the run for like $30 a probe.
 
After several years I had to replace one of my probes. The old one started having wild swings in temperature. The new one worked just fine after calibration.
Did you call CS? Back in the day they would send a new probe immediately with a little gift as well. Might give it a try.
 
i did my first cook (Rack of Pork) on my new 590 last night. have had pellet grills for 10+ years. I put the two RT probes in different ends of the roast and a Thermoworks in the middle. Of course i had three different readings but not too far apart (5 degrees from high to low) and used an instant thermometer to see the real temp. Like someone here said, leave inprobes are for estimating.

to calibrate, you set the amount you want to increase or decrease the probe reading, not the temperature you want it to go to. For example, if the probe is reading 35 in the ice/water mixture, set it to -3, so it gets to 32.
