First peek at 8:00 am. RFX probes show mid-140s internal temp and ThermaPen One confirms at 144F. Will wrap in pink paper soon. Grill temp now at 250F and holding steady per the MAK app, 🙄

Put a 10# butt on around 9pm last night @225. All was normal on my rt700 until about 3:30 this morning. As you can see a ghost must have taken control, grill temps went a little wonky. Luckily it finally got back to normal after 4:30.
I guess that’s what I get for vacuuming out the fire pot before my cook. 🤣

And of course the new app update let me know every time it over shot and was preheating again 🙁

I’ve not tried the foil boat yet, but the people who have appear to love it. I’m going to try it on my next brisket cook.
Last briskets I did I foil boated them and then an extended rest. By far the best I had done.

So tomorrow will be an experiment with the tri-tip. All prepped, festering, and waiting till tomorrow morning.

That's a proper stocked fridge sir, mine in the garage looks very similar except for I love me some IPA's and pale ales.
I love IPA’s and pale ales as well.

Problem is I drink them at the same pace as lawnmower beers, and, well things catch up on me and start to go sideways.

Have plenty of reserves to pace myself.

Pork butts and smoked baked beans. These stalled at a lower temp than expected. 158 to 162. After an hour and no movement, wrapped them. Had smoker at 230 for 6 hours. Bumped up to 300. Beans will be thankful

I did reverse sear cowboy ribeye from sam's club. Extreme smoke for 1 hour, then 250 degrees for another hour or so.

I did "cheat" by searing them on the kamado. Good smoke flavor from the recteq. I really, really enjoy the extreme smoke mode. I'm still on my first bag of pellets, which is the lumberjack maple hickory cherry blend.

These were pretty thick. 2.33 pounds each, and about 2 1/4 inch at its thickest point.

Well, this is as much of the end result as I could get photos of before the locust swarm arrived. 🤣

That looks great, Jim! Hope it tasted as good as it looks.
Mine is still on the smoker this morning, since I only put it on after the fireworks last night. Probably a few more hours to go, then a good long rest (for both me and the brisket). Fingers crossed.

Pulled the trisket at 203F after 10.75 hrs.

Quickly unwrapped to pull out probes which slid out like glass, snapped a pic, then tightly rewrapped and into a 150F warming drawer.

Dinner plans put on Plan B tonight as a tropical storm reaches the South Carolina Lowcountry. All considered, our problems are nothing at this point. However, if you are believer say a prayer for the folks in Kerr County Texas. I’ve seen a LOT of flash floods and damage in my world in the Appalachian hills of Ohio/Kentucky/Tenessee/Western North Carolina, but what is happing in Texas is just beyond nuts. 🙏🏻

Amen to that, my friend. Our grandson-in-law is a firefighter in that general area and what he and his department are dealing with is horrendous.
