So, for testing and breakin, I have only done a couple runs with chicken. Well, today I did a prime beef short rib - Perfect!

One thing that blows me away about this grill is the consistent temps. I am coming from a Traeger were the tempts drift all over the place. I was watching the temp graph during the cook and it was like a laser unless I lifted the lid. Love this freaking grill!
 
My 1250 is probably as accurate as my oven in the kitchen. As long as you don’t leave the lid open too long it never varies more than 10 degrees and it recovers within a few minutes. It would be difficult to improve on the design other than installing a good lid seal.
 
I wish I could find short ribs like that around my hood. Never see them with so much meat. Nicely done.
